Chicken Parmesan

Chicken Parmesan is one of those old-school dishes that is completely underrated and underap­ preciated. The combination of crispy bread crumbs and gooey cheese really can’t be beat. Add in a fabulous marinara sauce, and you’ve got it made! Be sure to have extra sauce for dipping.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 large eggs
  • 1 cup panko bread crumbs
  • 1 cup freshly grated Parmesan cheese
  • 1 cup marinara sauce, warmed, plus extra for serving
  • Oregano for garnish

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Pound the chicken breasts with a meat mallet to 1/2-inch thickness.
  3. In a small bowl, crack both eggs and beat until smooth. Combine the panko and Parmesan cheese in a zip-top plastic bag. Dredge the chicken breasts into the egg mixture, followed by the panko mixture. Shake off any excess crumbs and lay on the baking sheet.
  4. Bake until the chicken is golden and fully cooked, about 30 minutes. Spoon the marinara over the Garnish with oregano and serve with extra marinara on the side.

Ingredients

Scale
  • 2 large eggs
  • 1 1/2 cups bread crumbs
  • 3/4 cup finely grated Parmesan (about 2 ounces)
  • Salt and pepper to taste
  • 4 (6-ounce) chicken cutlets, pounded 1/2″ thick
  • 5 tablespoons olive oil, plus more for brushing
  • 1 (24-ounce) jar marinara sauce
  • 1 cup coarsely grated mozzarella

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Beat the eggs in a large shallow bowl. In a separate bowl or plate, mix the bread crumbs and Parmesan with a fork. Add salt and pepper.
  3. Working with 1 cutlet at a time, dip in the egg, allowing the excess to drip back into the bowl. Dredge in the bread crumb mixture, shaking off any excess, then press to adhere. Transfer the chicken to a baking sheet.
  4. Brush with the oil and top with the marinara and mozzarella.
  5. Bake for 20 minutes. Serve.
