Caesar Chicken and Kale
Kale is one of those superfoods that it seems like we always hear so much about. It’s jam-packed with vitamins A, K, and C, among others, making this dish a must-have for any health-conscious meal plan. This is a dinner recipe you can feel really good about eating!

Ingredients

- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper
- 3 tablespoons store-bought Caesar dressing, plus more as needed
- 1 tablespoon chopped fresh parsley
- 6 cups chopped kale
- 1/4 cup shredded Parmesan cheese
- Juice of 1/2 lemon
- 1/4 cup croutons
- Lemon wheels, for garnish
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken generously with salt and pepper. Add the chicken to the pan and cook for 5 minutes on each side until cooked through and golden brown on both sides. Transfer the chicken to a plate and cover with aluminum foil.
- To the same pan, set over medium-low heat, add the Caesar dressing and chopped parsley, stirring to warm it through and to scrape up any flavorful bits from the bottom of the pan. Add the kale and season generously with salt and pepper. Stir and cook for 2–3 minutes until the kale is wilted. Add up to 1⁄8 cup water to the pan to help the kale wilt, if needed. Remove from the heat and return the chicken to the pan. Sprinkle with Parmesan cheese, croutons, and lemon juice. Garnish with lemon wheels and serve.
