Salted Caramel Bars

- 80 saltine or club crackers
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed light brown sugar
- 1/2 cup whole milk
- 1⁄3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1 cup dark chocolate chips
- 1 cup almonds, toasted and chopped
- Sea salt
Instructions
- Line a 9 x 13-inch baking sheet with parchment paper, leaving an overhang.
- Line the baking sheet with a layer of crackers, cutting them to fit if needed.
- In a medium saucepan, melt the butter. Add the brown sugar, milk, granulated sugar, and vanilla. Bring to a boil, then cook, stirring continuously, for 5 minutes.
- Remove from the heat and pour half the mixture over the crackers.
- Place another layer of crackers over the butter-sugar mixture. Pour the remaining butter-sugar mixture over the crackers. Top with a final layer of crackers.
- Put the semisweet chocolate chips and dark chocolate chips in a medium microwave-safe bowl. Microwave on high in 30-second intervals, stirring after each, until melted. (Alternatively, melt the chocolate in a saucepan on the stovetop.)
- Pour the melted chocolate over the crackers and spread it evenly.
- Top with the toasted almonds and a bit of sea salt.
- Chill for at least 1 hour before cutting into bars to serve.
