Chocolate Haystacks
I love to make this no-bake recipe during the summer when it’s hot and humid outside. The last thing you want to do is turn on your oven! The kids will love helping you break up the chow mein noodles, which give the cookies extra crunch.

- 1 cup dark chocolate chips
- 1 cup peanut butter chips
- 1 tablespoon vegetable shortening
- 1 (6-ounce) package chow mein noodles, coarsely broken
- 1/2 cup chopped cashews
- Sea salt
Instructions
- In a medium microwave-safe bowl, combine the dark chocolate chips, peanut butter chips, and shortening and microwave for 1 minute on high power. Stir and continue to microwave in 15-second intervals, stirring after each, until melted.
- Stir in the chow mein noodles and cashews until well combined.
- Line two baking sheets with parchment paper.
- Using a cookie scoop, shape the dough into 1-inch balls and place on the prepared baking sheets about 2 inches apart. Sprinkle the tops with sea salt.
- Chill for 1 hour, until set. Serve.
