This 1-Minute Fresh Fruit Cobbler is a quick and easy dessert recipe that promises to satisfy your sweet tooth while using fresh, healthy ingredients. This recipe is perfect for those moments when you crave a warm, comforting dessert but don’t want to spend hours in the kitchen, and you are trying to avoid snacks that might not be all that healthy.

One of the standout features of this recipe is its simplicity. With just a handful of ingredients, most of which are likely already in your pantry, you can whip up a delicious cobbler in no time. The recipe calls for a combination of flour (all-purpose or gluten-free), baking powder, salt, milk (almond milk or any preferred variety), melted unsalted butter, and fresh fruit. If you do want to sweeten it, try a teaspoon of honey or sugar mixed with the fruit.

I like to use blackberries because they are naturally low-sugar, but you can easily swap them out for any fresh fruit you have on hand, such as strawberries, peaches, or apples. While this is convenient and fast, some may argue that traditional oven-baked cobblers have a slightly better texture and flavor. However, for those short on time or without access to an oven, this microwave version is a fantastic alternative. If you want to use an oven, bake it for 15 minutes at 350F.

Ingredients

Scale
  • 1/4 cup all-purpose or gluten-free flour
  • 1/4 tsp baking powder
  • pinch of salt
  • 2 tbsp almond milk (or the milk you like)
  • 2 tsp unsalted butter melted
  • 1/2 cup fresh blackberries (or any fresh fruit!)

Instructions

  • Mix flour, sugar, baking powder, salt, milk, and melted butter in a small bowl until combined.
  • Place fruit in a large microwave-safe ramekin or mug, and slightly mash.
  • Spoon the batter on top of the blueberries.
  • Microwave on high for 30 seconds, check, then microwave for another 30 seconds. Adjust time as needed. Enjoy!

Notes

If you prefer to not use a microwave, bake it in the oven for 15 minutes at 350F.
