Stir and Bake Bars
As much as I love baking, even I can admit that it can sometimes feel tedious. Who wants to get home after a long day at work and worry about frosting something perfectly? For those lazy days, this homemade dessert hardly feels like any work at all! You’re still rewarded with a chocolaty masterpiece when it comes out of the oven.

- 1 (15.25-ounce) package devil’s food cake mix
- 1 cup sweetened shredded coconut
- 1/2 cup quick-cooking oats
- 1/2 cup packed light brown sugar
- 1⁄3 cup vegetable oil
- 1⁄3 cup water
- 2 large eggs
- 1/2 cup dark chocolate chips, plus extra for topping
- 1/2 cup coarsely chopped walnuts, plus extra for topping
Instructions
- Preheat the oven to 350 degrees F. Lightly coat a 9 x 13-inch baking dish with cooking spray.
- In a large bowl, combine the cake mix, shredded coconut, oats, and brown sugar, stirring with a spatula or wooden spoon to break up any lumps.
- In a medium bowl, combine the vegetable oil, water, and eggs and mix with a fork. Add to the dry ingredients and mix until well combined. Pour into the prepared baking dish, spreading it to the sides and corners in an even layer.
- Sprinkle the dark chocolate chips and walnuts evenly over the top. Bake for 25 to 30 minutes; cool completely on a wire rack. Top with additional chocolate chips and walnuts, cut into squares, and serve.
