- 1 cup confectioners’ sugar
- 1 tablespoon unsalted butter, softened
- 1 cup crushed pretzels
- Toppings
- 1 cup dark chocolate chips
- 1/8 teaspoon instant espresso powder
Instructions
- For the cookies: Line a baking sheet with waxed paper or parchment paper.
- In a large bowl, combine the peanut butter, confectioners’ sugar, butter, and crushed
- Using a cookie scoop, shape the dough into 1-inch balls and place on the prepared baking sheet about 1 inch apart. Freeze for 30 minutes or until firm.
- For the toppings: In a small microwave-safe bowl, combine the dark chocolate chips and espresso powder. Microwave at 30-second intervals until fully melted.
- Drizzle the melted chocolate over the pretzel bites. Serve.
Notes
- Use crunchy peanut butter instead of creamy. Change up the type of chocolate chips: milk, semisweet, or white.
