Instructions
- Prepare the dates: Combine the chopped dates and boiling water in a bowl. Stir in the baking soda and let sit for 10 minutes. Blend until smooth or leave slightly chunky for texture.
- Make the batter: Preheat the oven to 350°F (175°C). In a bowl, sift together the flour, baking powder, and salt. In a separate bowl, cream the butter and brown sugar until light and fluffy. Beat in the eggs, one at a time, then mix in the vanilla. Fold in the flour mixture and the date mixture until combined.
- Bake: Pour the batter into a greased 9-inch baking dish or individual ramekins. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
