Roasted Garlic Hummus is a delightful twist on the classic Middle Eastern dip that has captured the hearts and taste buds of food enthusiasts worldwide. This savory and creamy spread is a testament to the ingenuity of home cooks and chefs who have taken traditional hummus to new heights by incorporating roasted garlic’s rich, mellow flavor.

Hummus, which originated in the Middle East, has a long and storied history dating back to ancient times. The basic recipe consists of cooked and mashed chickpeas, tahini (sesame paste), lemon juice, and garlic, blended together until smooth and creamy. This simple yet flavorful combination has made hummus a staple in Middle Eastern cuisine, often served as a dip or spread alongside pita bread, vegetables, or falafel.

Adding roasted garlic to the classic hummus recipe brings a new dimension of flavor that elevates the dish to a gourmet level. Ingredients

Scale
  • 1 head of garlic
  • 1 tablespoon olive oil
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 1/4 cup water
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • Paprika and extra virgin olive oil, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic, exposing the cloves. Place the garlic on a piece of aluminum foil, drizzle with 1 tablespoon of olive oil, and wrap the foil around the garlic to form a sealed packet.
  3. Roast the garlic in the preheated oven for 30-40 minutes, or until the cloves are soft and golden brown. Allow the garlic to cool slightly.
  4. Once cooled, squeeze the roasted garlic cloves out of their skins and into a food processor.
  5. Add the drained and rinsed chickpeas, tahini, lemon juice, water, ground cumin, salt, and pepper to the food processor.
  6. Process the mixture until smooth and creamy, scraping down the sides of the bowl as needed. If the hummus is too thick, add more water, 1 tablespoon at a time, until the desired consistency is reached.
  7. Taste the hummus and adjust the seasoning if needed.
  8. Transfer the hummus to a serving bowl. If desired, garnish with a sprinkle of paprika and a drizzle of extra virgin olive oil.
  9. Serve the roasted garlic hummus with pita bread, crackers, or fresh vegetables for dipping.

Notes

  • For a smoother hummus, remove the skins from the chickpeas before processing.
  • You can store the hummus in an airtight container in the refrigerator for up to 5 days.
