Ingredients
- 2 cups cooking oil (sunflower, vegetable, grapeseed, peanut)
- 15 scallions, with green and white sections separated
Instructions
- Pour oil into a deep frying pan.
- Add the white sections of the scallions to the warm oil and simmer over medium-low heat until the scallions begin to wrinkle.
- Add the green sections of the scallions and simmer until the greens turn brown.
- Remove from heat immediately and let the mixture cool.
- Store oil (including scallion pieces) in a sterilized jar in the fridge. Use within a month.
