This Roasted Garlic Hummus is creamy and savory, infused with the rich, mellow flavor of roasted garlic, perfect for dipping or spreading on your favorite bread or vegetables.

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic, exposing the cloves. Place the garlic on a piece of aluminum foil, drizzle with 1 tablespoon of olive oil, and wrap the foil around the garlic to form a sealed packet.
  3. Roast the garlic in the preheated oven for 30-40 minutes, or until the cloves are soft and golden brown. Allow the garlic to cool slightly.
  4. Once cooled, squeeze the roasted garlic cloves out of their skins and into a food processor.
  5. Add the drained and rinsed chickpeas, tahini, lemon juice, water, ground cumin, salt, and pepper to the food processor.
  6. Process the mixture until smooth and creamy, scraping down the sides of the bowl as needed. If the hummus is too thick, add more water, 1 tablespoon at a time, until the desired consistency is reached.
  7. Taste the hummus and adjust the seasoning if needed.
  8. Transfer the hummus to a serving bowl. If desired, garnish with a sprinkle of paprika and a drizzle of extra virgin olive oil.
  9. Serve the roasted garlic hummus with pita bread, crackers, or fresh vegetables for dipping.
