Well, this is my attempt at capturing that magic! I created this blend after a spectacular (but wallet-emptying) vacation to Greece years ago.
The first time I made lamb chops with this rub at home, I closed my eyes and was instantly transported back to that little blue-and-white taverna overlooking the Aegean. Mediterranean herb blends have been perfected over literally thousands of years – no pressure or anything!
Traditional mixes vary slightly between Greece, Italy, and the Middle East, but they all embrace that perfect harmony of oregano, rosemary, and garlic that seems to be encoded in the DNA of the region.
Don’t have fennel seeds? A pinch of anise works too. This blend turns everyday pork chops into something that feels special enough for company, and don’t even get me started on what it does to a rack of lamb!

Ingredients
- 2 tablespoons dried oregano
- 2 tablespoons dried rosemary (crushed)
- 1 tablespoon dried thyme
- 1 tablespoon dried marjoram
- 1 tablespoon dried mint
- 1 tablespoon garlic powder
- 2 teaspoons sea salt
- 1 teaspoon black pepper
- 1 teaspoon dried lemon peel
- 1 teaspoon ground fennel seeds
- ½ teaspoon ground cinnamon

- Mix together then store in a 4oz jar

- Serving size: 1-2 tablespoons per pound of meat
This Mediterranean Lamb & Pork Herb Rub works best when you really give it time to make friends with your meat. For lamb, massage it in at least 2 hours before cooking (overnight is even better!) and don’t be stingy – herb rubs are meant to create a flavorful crust. For pork, I like to brush the meat with a little olive oil first, then apply the rub generously. It’s also magical sprinkled over cubed meat for souvlaki skewers, or mixed into ground lamb for the best burgers ever.
Pair Mediterranean-rubbed meats with simple sides like lemon-dressed greens, roasted potatoes with more herbs (because there’s no such thing as too many herbs), or a classic Greek salad.
