Can we all just agree that roasted garlic is one of the greatest smells on planet Earth? The way it transforms from sharp and pungent to sweet and nutty is basically kitchen alchemy at its finest. This Roasted Garlic & Oregano Butter Sauce combines that magical roasted garlic flavor with aromatic oregano and, well, BUTTER (because everything is better with butter, it’s just science). It’s the kind of sauce that makes people close their eyes and make involuntary “mmm” noises when they taste it – which is basically the highest culinary compliment, right?
The combination of garlic and oregano is a cornerstone of Mediterranean cooking, particularly Italian cuisine, where these flavors have been perfected over centuries. While nothing can fully replace the experience of actual roasted garlic cloves mashed into butter, this recipe gives you all that amazing flavor without having to wait an hour for garlic to roast. (Though if you have time, roasting your own garlic* takes this sauce to the next level!) *To roast garlic: Cut the top off a head of garlic to expose cloves. Drizzle with olive oil, wrap in foil, and bake at 400°F for 35-40 minutes until soft and golden.

This luxurious Roasted Garlic & Oregano Butter Sauce is practically MADE for bread – brush it onto split garlic bread before toasting, or serve it warm as a dipping sauce for crusty Italian bread (warning: people will fight over the last drop). It’s also magnificent drizzled over pasta, particularly stuffed varieties like ravioli or tortellini where the sauce can pool in all the nooks and crannies.
For a restaurant-worthy dinner that takes minimal effort, drizzle this butter over grilled steak or roasted chicken, then sprinkle with grated Parmesan cheese – the combo is absolutely divine!
It also transforms plain vegetables into something special – try it on roasted broccoli or cauliflower for a side dish that might just upstage your main course. The sauce keeps in the refrigerator for about a week – just reheat gently before serving. This sauce makes an incredible base for garlic shrimp – just add a splash of white wine while cooking the shrimp and dinner is done in 10 minutes flat!
