Butternut Squash Home Fries
Sometimes I’ll snack on these instead of potato fries while I’m catching up on my favorite TV shows. Crispy on the outside and smooth on the inside, these fries are a simple yet effective way to curb any pangs of hunger. And since they’re baked instead of fried, they aren’t loaded down with unnecessary fats and oils.

- 1 butternut squash, peeled and cut into 1/2-inch cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
- Ketchup, for serving
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Place the squash on the baking sheet and drizzle with the olive oil. Add salt and pepper and toss to coat so that all of the squash cubes are evenly coated.
- Bake for 35 to 40 minutes or until golden brown to your liking. Toss every 10 minutes.
- Serve warm with ketchup.
