Smoked Salmon and Cream Cheese Bites
Salmon provides so many health benefits, so I like to work it into recipes when I can. Eating salmon can improve both your cardiovascular health and your brain function—how great is that? By pairing these with cucumbers, you get something a little bit fancy, a little bit sophisti cated, and a whole lot of yum.

- 3 English cucumbers, peeled and cut into 1/2-inch slices
- 1 (8-ounce) package cream cheese, softened
- 1/4 cup crème fraîche
- 3 tablespoons chopped fresh dill
- 1 tablespoon horseradish
- 1 teaspoon lemon zest
- 1/2 teaspoon lemon juice
- Capers, drained (about 1/4 cup)
- 1 pound smoked salmon, cut into bite-size pieces
- Dill fronds, for garnish
Instructions
- Using a melon baller, scoop a small depression in the top of each cucumber slice, forming a little Place the slices on a paper towel to dry while preparing the cream cheese topping.
- In a medium bowl, combine the cream cheese, crème fraîche, chopped dill, horseradish, lemon zest, and lemon juice.
- Scoop 1 teaspoon of the cream cheese mixture into each cucumber cup. Sprinkle a few capers on top of the cream cheese. Add a piece of smoked salmon and top with a dill frond. Serve.
