Transform your barbecue into a culinary experience with these Lemon-Garlic Grilled Zucchini spears. This simple yet flavorful recipe combines the freshness of lemon, the richness of garlic, and the smokiness of the grill to create a perfect side dish for your summer gatherings.

Plump zucchini spears, kissed by the flames of the grill, their vibrant green skins charred to perfection, yielding to reveal tender, succulent flesh within. But that’s just the beginning. What sets this dish apart is the irresistible combination of tangy lemon and aromatic garlic combined with rosemary to coat the zucchini spears. Letting the zucchini rest in the marinade is an essential part of the process!

Once the grill is at a medium-high heat, grill the zucchini spears for 3-4 minutes per side or until they develop grill marks and are tender. Once cooked, they should be served immediately.

Ingredients

Scale
  • 4 medium-sized zucchinis, sliced into spears
  • 1/4 cup olive oil
  • Zest and juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, dried rosemary, salt, and pepper.
  2. Toss the zucchini spears in the marinade until evenly coated. Let them marinate for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the zucchini spears for 3-4 minutes per side or until they develop grill marks and are tender.
