Honey Sunflower Bites

My Honey Sunflower Bites recipe is the result of a summer experiment gone right. I was determined to make something special with the sunflower seeds harvested from my garden and that’s when I stumbled on this idea—Honey Sunflower Bites!

I have always loved honey, so I decided to combine it with sunflower seeds. The result was Honey Sunflower Bites—a crunchy mix of sweetness and healthy ingredients. Perfect for breakfast, as an afternoon snack, or even as a dessert, this delight is sure to please all taste buds!

I use only the freshest ingredients in Honey Sunflower Bites; in fact, I dry the heads of the sunflowers right from my garden. It’s something my grandmother taught me when I was young, so I’m sure to grow them every year in her honor.

These Honey Sunflower Bites are super simple to make. You want to get the honey nice and hot, but don’t burn it. It just needs to start bubbling a bit, then you can add everything in, and voilà, it’s practically done once you roll it out and shape it into bites for later. Store them in the refrigerator so they hold up, but they’ll travel well in a cooled lunchbox too.

Ingredients

Scale
  • 1/2 cup honey
  • 1 cup sunflower seeds
  • 1/4 cup raisins
  • 1/4 cup peanuts

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a small saucepan over medium heat, add honey until it begins to bubble, then sunflower seeds, raisins, and peanuts until combined.
  3. Pour onto parchment paper, then use another piece (sprayed with non-stick oil first) to press down and flatten the mixture (you can also use a rolling pin).
  4. Remove the top piece and cool for 10 minutes, then cut into bars, or use cookie cutters to make shapes.
  5. Refrigerate to set (about 2 hours), then enjoy!
