A Blueberry Coffee Cake is the perfect way to use fresh blueberries. It is one of my favorite breakfast treats! I love to make it for my family on weekends or when we have company over. They’re always impressed with how delicious this cake is!
This Blueberry Coffee Cake is moist and fluffy. It’s tender and jam-packed with blueberries that give it just the right amount of tartness. In just about an hour, you can have a delicious Blueberry Coffee Cake on the table — from my personal experience, it doesn’t take very long for them to disappear!
One of the things that I love about this recipe is that you can easily control how sweet you want your cake to be. The eggs and vanilla added to the creamed butter and sugar give the cake a light and airy texture. The cinnamon-infused flavor of the blueberries can make your taste buds dance! You can use any type of milk for this recipe, but I prefer whole milk because it gives the cake a richer flavor. If you’re feeling indulgent, you can even use heavy cream! Watch out!
This Blueberry Coffee Cake is best enjoyed fresh out of the oven, but if you want your treat to last longer, you can store it in an airtight container at room temperature. Since I discovered Blueberry Coffee Cake’s magic, breakfast has never been so hearty!

Ingredients
- 1/2 cup butter
- 1 cups sugar
- 2 large eggs
- 2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 3 teaspoons baking powder
- 1 cup milk
- 2 cups blueberries
Instructions
- Preheat the oven to 325 degrees.
- Spray or lightly butter the inside of a 9×13 baking dish.
- Cream butter, add sugar gradually. Add eggs and vanilla.
- In a separate bowl, combine flour, salt, cinnamon, and baking powder.
- Add half of flour mixture, then blend. Add milk and rest of flour mixture while slowly blending.
- Mix in washed blueberries.
- Bake for 45 minutes uncovered.
- Remove from oven. Serve hot or let cool to store.
- Refrigerate, covered.

Baking soda or Baking powder.
Recipe says baking powder in the list of ingredients but says add baking soda in instruction 4.
We did use baking powder but the cake came out very dense and shrunk from the sides of the pan by about a quarter inch on each side.
The ingredient says baking powder, but in the instructions it says baking soda. Which is it?
