Say goodbye to sugary snacks and hello to this delightfully wholesome Apple Cinnamon Chia Pudding. Chia seeds are the star of this show, and for good reason. These tiny seeds pack a powerful nutritional punch, loaded with fiber, protein, and omega-3 fatty acids. When soaked in liquid, they develop a unique gel-like texture that’s creamy and satisfying. It’s like nature’s very own pudding!

We’re using unsweetened almond milk as our soaking liquid, which keeps the calorie count low while adding a subtle nutty flavor. A touch of maple syrup provides just enough sweetness without overwhelming the natural flavors of the other ingredients. And let’s not forget our apples – we’re using sweet Gala apples here, grated finely to distribute their flavor and natural sweetness throughout the pudding.

The cinnamon in this recipe isn’t just for flavor (although it does make the pudding taste like apple pie!). Cinnamon has been shown to help regulate blood sugar levels, making this a great option for a balanced breakfast or afternoon snack. Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk
  • 1 medium Gala apple, cored and grated or blended
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • Optional toppings: granola, chopped nuts, Greek yogurt

Instructions

  1. In a bowl, whisk together chia seeds, almond milk, maple syrup, cinnamon, nutmeg, and vanilla.
  2. Stir in grated/blended apple.
  3. Cover and refrigerate for at least 2 hours or overnight.
  4. Before serving, give it a good stir. If too thick, add a splash of almond milk.
  5. Top with your choice of toppings and enjoy!
