Lavender Simple Syrup

Would you believe the first time I made Lavender Simple Syrup, I was actually trying to recreate a drink I had at a garden party? It’s funny how some of the best kitchen adventures start that way! Now this fragrant syrup has become my secret weapon for elevating simple drinks into something special, especially in the Blueberry-Sage Smash that never fails to impress my guests.

Let me tell you – working with lavender can be tricky. The line between “beautifully floral” and “grandma’s soap drawer” is surprisingly thin! I learned (the hard way) that using culinary lavender really matters. That first batch I made with decorative lavender from a craft store? Let’s just say it wasn’t exactly the sophisticated flavor I was going for!

Here’s a little tip from my many lavender experiments: timing is everything. I keep a timer on my phone specifically for this syrup because even one minute too long can change the whole profile. I love watching the syrup turn slightly purple as it simmers – it’s like a little kitchen magic show! And when you nail the timing just right, you get this perfectly balanced syrup that makes the Blueberry-Sage Smash taste like it came from a fancy cocktail bar.

The best part? When friends come over and say, “This doesn’t taste like a mocktail!” That’s when I know the lavender syrup has worked its magic. It adds this sophisticated layer that makes people forget they’re drinking something non-alcoholic.

Ingredients

Scale
  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons dried culinary lavender

Instructions

  1. Combine water and sugar in a pot
  2. Heat until sugar dissolves
  3. Add lavender and simmer 5 minutes
  4. Strain and cool
  5. Store up to 2 weeks refrigerated

Notes

  • Use only culinary lavender
  • Don’t over-steep to avoid soapy taste
  • Strain through fine-mesh for clarity

    How do I know if my lavender is culinary?

      Lavender is not considered poisonous, although some varieties taste better than others. Try a bud and if you like the taste then go ahead and try it in your recipe. Just remember that a little goes a long way – subtle is better than soapy.
