Leftover Turkey Shepherd’s Pies

We’ve all been through it. You cook a giant turkey, and then you’re stuck with all of the leftovers. What do you do with them? You could make some sandwiches, but even that gets old after a while. That’s why I love to make Leftover Turkey Shepherd’s Pies.

My grandmother used to call us her “little pie makers” because we would make so many pies during the holidays, but Leftover Turkey Shepherd’s Pies are my favorite. She would make the crust from scratch and we would help her roll it out. Then she would fill it with a mixture of leftover Turkey, stuffing, gravy, and vegetables. We’d top it off with some mashed potatoes and then bake it until it was golden brown.

Fairly often in my family, but especially around Thanksgiving, we would have so much leftover turkey. But that’s the beauty of Leftover Turkey Shepherd’s Pies; you can make them with whatever you have on hand! Leftover turkey, chicken, ham, beef, it doesn’t matter. Just add some gravy and veggies, and you’ve got a delicious pie that everyone will love.

Of course, we don’t only have turkey during Thanksgiving; any holiday that calls for a big dinner is only complete with turkey. And ever since I learned this recipe, I make Leftover Turkey Shepherd’s Pies all year round. You name the holiday — if there’s turkey involved, I’m making Leftover Turkey Shepherd’s Pies! It always makes me feel like the holidays never have to end.

Ingredients

Scale
  • 1 1/2 cups chopped cooked turkey
  • 1 cup gravy
  • 1/2 cup cooked peas
  • 1/2 cup chopped cooked carrots
  • 2 cups mashed potatoes

Instructions

  1. Preheat the oven to 350 degrees F. Lightly coat 4 (8-ounce) ramekins with cooking spray.
  2. In a large bowl, combine the turkey, gravy, peas, and carrots. Divide the mixture between the ramekins. Top each with 1/2 cup mashed potatoes. Do not over-smooth the tops; the peaks will brown for a pretty finish. Bake for 20 to 30 minutes, until bubbling and the tops are golden.
  3. Let cool for 10 minutes, then serve.
