Creamy Pumpkin Seed Dressing

The awesome thing about pumpkins is that there are a lot of creatively delicious ways you can cook its parts. Nothing goes to waste; whatever you make, you’d still have enough ingredients for another recipe,

Raw or roasted pumpkin seeds can easily be transformed into a delectable Creamy Pumpkin Seed Dressing that’s sure to be a hit with kids and adults alike. It is creamy, absolutely easy to make, and a breath of fresh air when you want to have something more than your typical salad dressing or dip. It only takes five minutes to prepare a delicious pumpkin seed dressing, making it perfect for people on the go.

Aside from being a quick recipe, making your very own Creamy Pumpkin Seed Dressing with leftover roasted or raw pumpkin seeds can let you add variety to your everyday snacks and meals. You can use it as a dip for chips, a dressing for your favorite salad, or drizzle it on some crunchy roasted vegetables for added flavor. Feeling like those hash browns are kind of boring? Put pumpkin seed dressing over them! Want to put a twist on your kid’s usual lunch? Add some pumpkin seed dressing! Itching for a quick midnight snack? You know the drill!

Ingredients

Scale
  • 1/3 cup pumpkin seeds, raw or oven-roasted
  • 1 clove of garlic (or to your taste)
  • 2 tablespoons lime juice
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1/2 cup boiled or filtered water

Instructions

  1. Add all ingredients to a blender.
  2. Blend until smooth and creamy. Add more water, if needed.
  3. Store dressing in an airtight container in the refrigerator.

    Too much Cumin for my taste. Dressing blends perfectly in my Vitamix and is smooth and creamy.
