
Quick Energy Bites
There are some recipes that become part of the adventure, and these Quick Energy Bites are one of them. They were a staple on a memorable “glamping” getaway with a group of friends, where the tents were somehow more luxurious than many hotel rooms and every day was filled with new experiences. Between hiking trails, horseback rides, vineyard visits, and exploring the beautiful Canadian countryside, we needed snacks that could keep up with our busy schedule.
These little bites proved to be the perfect traveling companion. Easy to pack, easy to eat, and packed with satisfying ingredients, they kept us fueled from one activity to the next. A combination of creamy peanut butter, hearty oats, sweet raisins, and graham cracker crumbs creates a snack that’s just sweet enough to feel like a treat while still providing lasting energy.
Best of all, they require no baking and only a handful of ingredients, making them ideal for busy mornings, lunchboxes, afternoon pick-me-ups, or outdoor adventures of any kind. Whether you’re heading out on a hike, relaxing at the beach, tackling a long road trip, or simply looking for a quick snack between errands, these energy bites are ready to go wherever the day takes you.

Quick Energy Bites
This is another one of my “glamping” food items, perfect for hiking, beach sitting, pitching a tent (not that I know how to do that), and riding horses. Fifteen happy ladies spent four days in Canada in tents nicer than my home with produce from my garden and wine from the vineyards we visited. We ate our fair share of these little bites of energy to keep us going from activity to activity, and they were the perfect snack for the plane ride home.

Ingredients
- 1/4 cup graham cracker crumbs
- 2 tablespoons unsalted butter, melted
- 1/4 cup old-fashioned oats
- 1/4 cup raisins
- 1/2 cup creamy peanut butter
Instructions
- Line a baking sheet with parchment paper.
- In a medium bowl, combine the graham cracker crumbs, butter, oats, raisins, and peanut butter.
- Using your hands, roll the dough into small balls, about 1 inch in diameter, and place on the lined baking sheet.
- Refrigerate for 1 hour before serving.
