Stained Glass Window Cookies

If you’re looking for the best no-bake cookie recipe to bring to your holiday festivities, these Stained Glass Window Cookies are just what you need! The shredded coconut reminds me of a peaceful winter night when, for a moment, everything feels just right.

To craft these delectable cookies, you’ll need a handful of simple yet flavorful ingredients: unsalted butter, semisweet chocolate chips, vanilla extract, salt, chopped walnuts, mini marshmallows, and sweetened shredded coconut. This delightful combination of ingredients sets the stage for a treat that will delight your taste buds.

The process begins by melting a stick of butter and a luscious package of semisweet chocolate chips in a large saucepan over low heat. Once these ingredients have melded into a silky mixture, you’ll introduce vanilla extract, a touch of salt, and the satisfying crunch of chopped walnuts. Allow this blend to cool for 15 minutes, during which the anticipation of what’s to come will only intensify.

Next, mini marshmallows join the mix, creating a delightful contrast of textures and flavors. As you stir them into the chocolatey concoction, you’ll feel a sense of excitement building.

Now comes the artistic touch that gives these cookies their name. You’ll spoon half of the mixture lengthwise down the center of a sheet of waxed paper, carefully rolling it into a log. To create the signature “stained glass” effect, generously sprinkle sweetened shredded coconut over the log and roll it until the outside is evenly coated in this snowy-white adornment. Repeat the process with the remaining dough, creating a second log that is equally enticing.

Patience is a virtue as you place the logs in the refrigerator, allowing them to chill for at least 2 hours. This step is crucial, as it allows the cookies to set, ensuring that each slice will be a perfect, harmonious blend of flavors and textures.

Finally, the moment arrives to unwrap these edible works of art and slice them into delicate 1/4-inch pieces. The reward for your patience is a platter of Stained Glass Window Cookies, each one a delectable masterpiece that captures the essence of the holiday season. With their rich chocolate, crunchy walnuts, fluffy marshmallows, and snowy coconut coating, these cookies are sure to enchant your guests and leave them yearning for more.
