  • 1 fennel bulb, fronds (the leafy top and stalks) removed, and cut into wedges
  • 3 tablespoons extra-virgin olive oil
  • 1/2 teaspoon coarsely ground sea salt
  • 1/2 teaspoon freshly ground pepper


  1. Preheat the oven to 400 degrees F.
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, toss the fennel wedges with olive oil, salt, and pepper until thoroughly and evenly coated.
  4. Roast fennel wedges on lined baking sheet for 25 to 35 minutes, until pieces become tender and crispy brown around the edges.

    Brenda, I hope you decide to plant fennel this year and also try this recipe. It is so easy and delicious, with a subtle anise flavor. The first time I served roasted fennel I had lots of fun watching my husband try to guess what vegetable he was eating…he kept saying that it looked like a wedge of onion but was soooo much better tasting. Now he asks me to make “fancy onions” on a regular basis.
