Homemade Fudge Candy Rolls

Is chocolate fudge candy? Many people on the internet have been debating whether chocolate fudge is a type of candy or in an entirely different category on its own. Some people say that chocolate fudge is candy because it contains sugar and is often eaten in small pieces. Others say that it’s not because it requires other ingredients (like milk, flour, etc.) to make. What do you think?

No matter what side of the argument you’re on — whether you’re pro chocolate fudge candy or not — there’s no doubt that the Homemade Fudge Candy Rolls are a combination of chocolate and candy. They’re rich, creamy, and super high in sugar, so you get the best of both worlds.

The process of making these candy rolls is simple. But if you really want to highlight their chocolatey goodness, you need to find the best unsweetened cocoa powder on the market.

Don’t worry, if you have no idea where to start, I’ve got you covered.

The best cocoa powders are usually natural and Dutch-processed. This is because the dutching process can neutralize the acidity of the cocoa powder, thereby infusing less air and increasing the fudgy consistency. In terms of taste, you need to find an unsweetened cocoa powder with high fat content (anywhere from 20 to 22% will do). The amount of fat will add richness and earthiness to the flavor, resulting in more tender and moist candies.

Once you’ve mastered the art of selecting the perfect cocoa, you can make the best Homemade Fudge Candy Rolls that ooze chocolatey-goodness in every piece.

I should mention that making this type of fudge is a bit different than traditional fudge, but it’s really a fun process. These candies are chocolatey and sweet and look cute when wrapped individually! Place them on each guest’s plate for the perfect after-dinner treat.

Ingredients

Scale
  • 4 tablespoons ( 1/2 stick) unsalted butter, plus more for the pan
  • 2/3 cup unsweetened cocoa powder
  • 3 cups sugar
  • 1/8 teaspoon kosher salt
  • 1 1/2 cups whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Butter a 9-inch square pan. Cut twenty-four to thirty-six 4-inch squares from parchment paper.
  2. In a heavy 4-quart saucepan, thoroughly combine the cocoa powder, sugar, and salt.
  3. Gradually stir in the milk with a whisk.
  4. Bring to a boil over medium heat, stirring continuously. Once the mixture boils, stop stirring.
  5. Clip a candy thermometer to the side of the pan, ensuring that the bulb is not sitting on the bottom.
  6. Boil, without stirring, until the mixture reaches 230 degrees F (soft ball stage).
  7. Remove from the heat and add the butter and vanilla, stirring with a wooden spoon. The mixture will hiss and bubble vigorously when you add these ingredients, so be careful.
  8. Pour into the prepared pan and place in the fridge. Once completely cool, remove from the fridge and divide into 24 to 36 equal portions. Roll each piece between your palms into the fudge candy shape. Once shaped, wrap in the prepared parchment squares.
  9. Store in an airtight container in the fridge.
