Chicken, Fennel, and Grape Quinoa Salad

One thing I love about salads — and I’m sure you do, too — is that not only are they healthy, but they can be time-saving meals that add so much more color to your dining experience. Of course, you can also enjoy them as an appetizer or a side, or even as a snack. Any time is the perfect time to have a salad!

If you’re looking for a salad recipe that you can whip up in a jiffy, then this Chicken, Fennel, and Grape Quinoa Salad is right up your alley! In just 20 minutes, you’ll have a nutritious and vibrant plateful of veggies, grain, fruit, and protein that you can indulge in, guilt-free.

Since we’re on the subject of saving time, I’d recommend buying a rotisserie chicken for your protein boost instead of cooking one yourself. Having some pre-cooked quinoa and toasted pine nuts ready will also cut down on the prep time. If you have those prepared beforehand then all you need to do is mix the ingredients together in a large bowl. It’s fast, easy, and super yummy!

What really gives this salad a nice twist are the grapes. Sweet and slightly tangy, the taste of fresh grapes become even more delicious with a bit of lemon juice and seasoning. Fennel, on the other hand, doesn’t just add to the whites and greens of your scallions, but they also let you enjoy a mild anise or subtle licorice flavor. Quinoa acts as a filling harmonizer, with its slightly nutty taste that’s punctuated by the toasted pine nuts. To cap it all off is your roasted chicken, which lends the salad a delightfully smoky flavor.

Ingredients

Scale
  • 5 scallions, white and green parts, finely chopped
  • 1 small fennel bulb, core removed and thinly sliced
  • 1 1/2 cups halved red grapes
  • 2 cups pre-cooked quinoa
  • Roasted-chicken meat, roughly chopped (about 2 cups)
  • 1 cup toasted pine nuts
  • 3 tablespoons fresh lemon juice
  • 4 tablespoons extra-virgin olive oil
  • 1/3 cup chopped flat-leaf parsley
  • Kosher or sea salt
  • Freshly ground black pepper

Instructions

  1. In a large mixing bowl, combine all ingredients except salt and pepper, and toss well to coat.
  2. Season to taste with salt and pepper.
