Get ready for the most refreshing drink you’ll ever make – Watermelon-Mint Juice! Every summer, when those huge watermelons start showing up at the farmers’ market, I can’t wait to whip up a batch. There’s something almost magical about transforming a big chunk of watermelon into this gorgeous pink elixir that just screams “perfect summer day.”

Here’s something I’ve learned after making countless batches: the trick isn’t just in picking a good watermelon (though that’s super important!), it’s in how you balance the mint. I used to just throw everything in the blender, but now I know that gently muddling the mint releases those essential oils without getting that bitter taste that can come from over-blending. That moment when you crush the mint leaves and that fresh aroma hits you – it’s like a little preview of how amazing your drink is going to taste.

I love watching people’s reactions when they first try this in drinks like the Tropical Sunset Dream or the Ruby Red Grapefruit Spritz. There’s this look of surprise because it’s so much more than just watermelon juice – the mint adds this wonderful fresh complexity that keeps you coming back for more. Ingredients

  • 4 cups cubed watermelon
  • 10 fresh mint leaves
  • 1 tablespoon lime juice

Instructions

  1. Blend watermelon until smooth
  2. Strain through a fine-mesh strainer
  3. Muddle mint leaves in the juice
  4. Add lime juice and stir
  5. Refrigerate up to 3 days

Notes

  • Use ripe, seedless watermelon
  • Keep well-chilled
  • Strain twice for clarity
