Blackberry-Thyme Sparkler Mocktail

The Blackberry-Thyme Sparkler came to life during one of my experimental evenings with our Berry-Basil Puree. I had this gorgeous batch of blackberries that were almost too pretty to blend, but I’m so glad I did! The way they work with the thyme creates this sophisticated drink that’s worlds away from your typical fruity mocktail.

This drink has a bit of an attitude – in the best possible way. While the Berry-Basil Puree brings deep, jammy notes of blackberry, it’s the fresh thyme that turns it into something conversation-worthy. There’s this moment when you muddle the thyme where the whole room fills with this incredible herbal aroma that hints at the complexity you’re about to taste.

The real game-changer here is using prosecco-style non-alcoholic sparkling wine instead of regular sparkling water. It adds this subtle dryness and more refined bubbles that make the drink feel special. When the bubbles hit the berry puree, they create these beautiful purple swirls that make every glass look like a tiny work of art.

I love serving this at twilight gatherings – you know, those elegant but relaxed evenings when friends linger over good conversation. The deep purple color looks absolutely stunning as the light fades, especially when you garnish it with a few plump blackberries and a delicate sprig of fresh thyme.

Here’s my pro tip: strain the muddled thyme mixture twice through a fine-mesh strainer. This extra step ensures you get all the flavor without any tiny leaves floating around. And warm the thyme sprig between your palms before using it as a garnish – it releases those aromatic oils that make the first sip even more amazing.

Ingredients

  • 1.5 oz Berry-Basil Puree
  • Fresh thyme sprigs
  • Prosecco-style non-alcoholic sparkling wine
  • Garnish: Fresh blackberries, thyme sprig

Instructions

  1. Muddle thyme with puree
  2. Strain into glass
  3. Add ice
  4. Top with non-alcoholic sparkling wine
  5. Garnish and serve

Notes

  • Strip thyme leaves gently
  • Double strain puree
  • Use chilled sparkling “wine”
