Rosemary-Citrus Infusion

Let me share something that’s become a total game-changer in my mocktail-making journey – the Rosemary-Citrus Infusion! I stumbled upon this combination while trying to recreate the aromatic magic of a fancy hotel drink, and now my kitchen regularly smells like a Mediterranean garden thanks to this wonderful concoction.

Can we talk about that moment when the hot water hits the rosemary and citrus? It’s absolutely heavenly! The first time I made this, I caught myself just standing over the pot, breathing in deeply and feeling like I’d been transported to some sunny herb garden in Tuscany. Fair warning: your whole house will smell amazing, and don’t be surprised if curious neighbors suddenly drop by to “say hello!”

Here’s a little trick I discovered through trial and error: lightly bruising the rosemary sprigs releases more of those aromatic oils, but you have to be gentle – you’re aiming for “lovingly persuaded” not “completely crushed.” And timing is everything with this infusion! I once got distracted by a phone call and left it steeping too long… let’s just say that rosemary can go from “beautifully herbaceous” to “tastes like a Christmas tree” real quick!

This infusion has become the secret weapon in my Citrus Mock-arita, where it adds this gorgeous herbal depth that makes people do a double-take and ask, “Wait, what’s in this?” It’s that unexpected element that takes a drink from nice to unforgettable.

  • Yield: Approximately 4 cups 1x

Ingredients

Scale
  • 4 cups water
  • 3 sprigs fresh rosemary
  • 2 oranges, sliced
  • 1 lemon, sliced

Instructions

  1. Bring water to a simmer
  2. Add rosemary and citrus
  3. Remove from heat and steep 30 minutes
  4. Strain and cool
  5. Store up to 1 week

Notes

  • Don’t over-steep rosemary or it becomes bitter
  • Gently press citrus to release oils
  • Use organic citrus if possible
