Citrus Mock-arita is a vibrant, zesty mocktail that captures the essence of a classic margarita through fresh citrus, herbal rosemary, and a spicy tajin rim, perfect for summer gatherings, taco nights, and festive celebrations.

As someone who absolutely adores a good margarita, creating the perfect non-alcoholic version became my personal mission. Enter the Citrus Mock-arita – a drink that captures all the vibrant essence of my favorite cocktail, built around our homemade Rosemary-Citrus Infusion and Lime Simple Syrup.

Let me tell you, getting that perfect margarita balance without tequila was tricky! But the Rosemary-Citrus Infusion adds this incredible depth that tricks your taste buds in the best possible way. The herbal notes from the rosemary play the same role as tequila’s distinctive bite, while the citrus creates that bright, fresh backbone that any good margarita needs.

The salt and tajin rim isn’t just for show – it’s essential to the whole experience. That first sip, where you get the salty-spicy kick followed by the bright citrus burst, is pure magic. I spent weeks perfecting the rim technique (yes, I’m that passionate about margaritas!), and I found that using fresh lime juice as the adhesive gives you the perfect stick while adding an extra layer of flavor.

This isn’t just another citrus drink – it’s got that same sophisticated edge that makes margaritas so special. The Lime Simple Syrup adds balanced sweetness without turning it into a sugary mess, while the orange juice brings body and complexity. When people tell me they can’t believe it’s non-alcoholic, I consider that the highest compliment.

Here’s my margarita-lover’s tip: serve it super cold in a properly chilled glass. Just like with a traditional margarita, temperature makes a huge difference in how the flavors come together. And don’t skip the rosemary sprig garnish – crushing it slightly releases oils that add an amazing aromatic element to each sip.

Ingredients

Scale
  • 1.5 oz Rosemary-Citrus Infusion
  • 1 oz fresh lime juice
  • 1/2 oz Lime Simple Syrup
  • 2 oz orange juice
  • Salt and tajin for rim
  • Garnish: Lime wheel, rosemary sprig

Instructions

  1. Rim glass with salt and tajin mixture
  2. Combine all ingredients in shaker with ice
  3. Shake vigorously for 10-15 seconds
  4. Strain into prepared glass over fresh ice
  5. Garnish and serve

Notes

  • Perfect rim technique important
  • Use fresh-squeezed citrus
  • Double strain for clarity
