Cucumber-Lime Refresher

You haven’t lived until you’ve tried making your own Cucumber-Lime Refresher! I stumbled upon this combination while experimenting in my kitchen one hot afternoon, and now I can’t imagine my summer drink collection without it. There’s something absolutely magical about the way cucumber and lime play together – it’s like they were meant to be best friends in a glass!

Let me share a little secret I discovered through trial and error: that tiny pinch of salt I include in the recipe? It’s a total game-changer! It might sound weird adding salt to a sweet drink, but trust me, it makes the cucumber taste more… well, cucumber-y, if that makes sense! And it somehow makes the lime pop even more. Every time I make this for friends, they can’t quite put their finger on why it tastes so much better than other cucumber drinks they’ve tried.

I’ve learned that using English cucumbers makes life so much easier – they have fewer seeds and a thinner skin, which means less prep work and a smoother juice. And here’s a pro tip from someone who’s made every mistake in the book: don’t skip the double-straining step! Yes, it takes an extra minute or two, but that silky-smooth texture is absolutely worth it.

This refresher has become my go-to base for fancy mocktails like our Garden Party Spritzer and Coconut Lime Cooler. But honestly? Sometimes I just mix it with sparkling water and a sprig of mint when I want to feel fancy while working from home. It’s like having a spa day in a glass!

Ingredients

Scale
  • 2 large cucumbers, peeled
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • Pinch of salt

Instructions

  1. Juice cucumbers in a juicer or blend and strain
  2. Mix with lime juice and honey
  3. Add pinch of salt to enhance flavors
  4. Strain again if needed
  5. Store in an airtight container up to 2 days

Notes

  • English cucumbers work best
  • Remove seeds if using regular cucumbers
  • Salt enhances sweetness but shouldn’t be detectable
