The moment you catch a glimpse of the Virgin Pink Paradise, you understand where it gets its name. But don’t let the pretty-in-pink appearance fool you – this sophisticated blend of our housemade Berry-Basil Puree with coconut cream creates something far more interesting than your typical fruity drink.

I love watching people’s reactions when they take their first sip. They’re expecting something sweet and simple, but instead, they get this beautifully complex experience. The tart berries dance with the creamy coconut, while subtle notes of basil weave through each sip, adding an unexpected herbaceous twist that elevates it from pleasant to unforgettable.

Getting the texture just right took some experimenting. The key, I discovered, is double straining the Berry-Basil Puree before blending it with the coconut cream. This extra step creates this impossibly silky texture that makes the drink feel positively luxurious. When you add the sparkling water, it transforms into something almost cloud-like.

This has become my signature drink for celebrations – bridal showers, baby showers, birthday brunches – any occasion that calls for something elegant yet playful. The natural pink color is stunning in photos, especially when garnished with fresh berries and a floating basil leaf. I’ve lost count of how many times I’ve had to share the recipe after serving it!

One of my favorite serving tricks is to freeze some of the Berry-Basil Puree into ice cubes. As they slowly melt, they create these beautiful swirls of color while keeping the drink perfectly chilled without diluting it. It’s these little details that turn a simple mocktail into an experience.

Ingredients

Scale
  • 2 oz Berry-Basil Puree
  • 1 oz coconut cream
  • 1/2 oz lime juice
  • Sparkling water
  • Garnish: Fresh basil leaf, fresh berries

Instructions

  1. Shake puree, coconut cream, and lime juice with ice
  2. Strain into glass
  3. Top with sparkling water
  4. Garnish and serve

Notes

  • Double strain to remove seeds
  • Use cold coconut cream
  • Fresh berries for garnish
