Hibiscus-Lemongrass Tea Base

Let me share one of my favorite flavor combinations – the Hibiscus-Lemongrass Tea Base! This vibrant infusion has completely changed how I make mocktails, especially the Ruby Red Grapefruit Spritz and the Sparkling Pomegranate Mojito that my friends can’t seem to get enough of.

The way you prep the lemongrass makes all the difference. Just roughly chopping it? Meh. But when you properly bruise it with the back of a knife, it releases these incredible citrusy oils that blend perfectly with the hibiscus.

Here’s my number one tip: don’t rush the steeping process, but don’t overdo it either. I actually set a timer for exactly 15 minutes because I’ve found that’s the sweet spot where the hibiscus gives you that gorgeous ruby color and tart flavor without becoming too intense. And watching that deep red color develop? It’s like a little kitchen chemistry experiment every time!

I love watching people’s reactions when they try the Sparkling Pomegranate Mojito made with this base. There’s always this moment of surprise when they realize it’s not just another fruity drink. The combination of floral hibiscus and citrusy lemongrass adds this sophisticated layer that makes people pause and really appreciate what they’re tasting.

Ingredients

Scale
  • 4 cups water
  • 1/4 cup dried hibiscus flowers
  • 2 stalks lemongrass, bruised

Instructions

  1. Bring water to a boil
  2. Add hibiscus and lemongrass
  3. Steep 15 minutes
  4. Strain and cool
  5. Store up to 5 days

Notes

  • Bruise lemongrass to release oils
  • Don’t over-steep hibiscus
  • Color should be deep red
