Lime Simple Syrup

Keeping limes on hand can be a chore. Rather than using lime juice and over-processed syrup in cocktails, make your own Lime Simple Syrup ahead of time!

My family has always loved having a glass or two of our favorite cocktails that I make, so there’s always a reason to have my Lime Simple Syrup around. It’s a good thing that I have all the limes I need to make it in my own indoor lime trees, but I envy those with giant ones in their backyard!

I remember the first time I made this recipe. I was so excited to finally have a use for all the limes growing on my little lime trees! I used the syrup to sweeten our iced tea one afternoon and everyone loved it. I used it in my Cucumber Gimlet(ish) recipe and they loved it even more! We loved how the syrup added the perfect flavor of sweet lime without the sour. It’s not too overpowering, but it’s just enough to take the edge off the vodka. I was so happy with how the drinks turned out that I decided to make a bigger batch of syrup after.

I’m glad I did because now, my family always has a bottle of it in the fridge! The great thing about this recipe is that I can make it ahead of time. It only takes 15 minutes to make a batch, so we never really run out.

Apart from using this to sweeten cocktails, I also add the Lime Simple Syrup to iced drinks, lemonades, and any cold drink. It gives any drink that extra zing! So whenever I serve cold drinks to my friends at home, and they ask about that “special something” I add, I always tell them it’s my secret ingredient: the Lime Simple Syrup.

I’ve been using it so often that even my husband doesn’t like his iced tea without it anymore. Thankfully, it doesn’t take forever to make. I just have to pick some limes, and get started on a batch.

Ingredients

Scale
  • 1 cup sugar
  • 1 peel of lime zest
  • ½ cup fresh lime juice
  • 1/2 cup water

Instructions

  1. In a saucepan over medium heat, add sugar, lime juice, and lime zest. Simmer for 5 minutes until sugar is melted, then add water and simmer for an additional 10 minutes until thickened, stirring every so often. Once done, cool, then pour into jar of your choice.
