I always find it fascinating how the word “cobbler” can mean different things. One definition refers to a shoemaker and another is an old term for a “clumsy workman.” Cobbler can also refer to a tall iced drink with sugar and a fruit slice. But, as you might have guessed, we’re going to talk about a different kind of cobbler: a sweet fruit dessert that’s usually baked with a biscuit-style topping.

The word “cobbler” itself is such an accurate way of describing this dessert: unlike pies, the top of a cobbler’s crust isn’t smooth but rather coarse and “cobbled” together. That’s not to say that this wonderful dessert is something you could just hurriedly put together. In fact, this Peachy Keen Peach Cobbler is a delicious slow-cooker concoction that’s worth the long wait!

Peach cobblers are pretty popular, and this Peachy Keen Peach Cobbler certainly holds up to fame. Peaches, being a sweet, floral, and versatile fruit, are a great choice for making a cobbler. The flavors can be both exquisite and decadent. When placed in a slow cooker, peaches become even more tender and irresistible.

What makes this Peachy Keen Peach Cobbler stand out from the rest is the quick-cooking oats that serve as an alternative to the usual dough for the crust. Quick-cooking oats are not just healthy, but they’re also creamy, smooth, and mild — a perfect pair for peaches! Along with the peaches and oats you’ll experience flavor notes from delightfully warm spices like nutmeg, cinnamon, and almond extract. With their sweet yet earthy qualities, they blend in perfectly with brown sugar, peach jam, and peach juice or nectar.

Making your Peachy Keen Peach Cobbler even richer is the addition of buttermilk baking mix with its creamy and buttery texture.

This recipe will take about five hours to make but when served with vanilla frozen yogurt or ice cream, you’ll instantly forget the long waiting time and just dig in!

Ingredients

Scale
  • 4 cups sliced peaches, fresh or canned
  • 2/3 cup quick-cooking oats
  • 1/2 cup packed light brown sugar
  • 1/3 cup buttermilk baking mix
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon kosher salt
  • 1/2 cup peach juice or nectar
  • 2 tablespoons peach jam
  • Vanilla frozen yogurt or ice cream, for serving

Instructions

  1. Spray the insert of a 6-quart slow cooker with cooking spray.
  2. Place the peaches in the slow cooker.
  3. In a large bowl, combine the oats, brown sugar, buttermilk baking mix, cinnamon, nutmeg, almond extract, and salt. Pour over the peaches.
  4. Mix the peach juice with the peach jam and pour over the baking mixture. Gently stir to combine.
  5. Place some paper towels under the cover to help with condensation. Cover and cook for 4 to 5 hours on Low.
  6. Serve with vanilla frozen yogurt or ice cream.
