Grilled Corn & Blue Cheese

Grilled corn is known primarily as a summertime snack, but it’s something you can enjoy any time of the year. It’s an ostensibly simple treat but one that has won the hearts of many because there’s nothing like the taste of sweet corn with some pleasant charring and a bolder flavor. Grilled corn is smoky and delightful to chew on, and you won’t even notice that you’ve had a lot until you actually start counting the discarded cobs!

Grilled corn is a nice snack for kids as well since it’s healthy, filling, and rich in fiber. You can even get older kids to have fun turning the corn on the grill! The combination of vibrant gold kernels with a bit of charring is definitely an eye-catcher that will get kids hurrying for a snack after playtime.

Whether you’re preparing a snack for the little ones or you’re looking for a side dish that’s easy to whip up, you can put a spin on the usual grilled corn by making a bowl of Grilled Corn and Blue Cheese! It’s a quick but sophisticated twist that will definitely make lovers of blue cheese salivate or introduce the flavor of blue cheese to those who haven’t been acquainted with it.

It’s really simple: grill some corn until tender, leaving its husks on. The husks actually keep the corn from drying out, retaining their moisture. Once done, cut the kernels from the cobs and mix them in a large bowl with, of course, blue cheese alongside some mayo, salt, and pepper. What makes this pairing blend so perfectly is that the sweetness of the corn provides a pleasant contrast to the sharp, tangy, slightly nutty, and milky flavors of crumbled blue cheese. Thick and rich, the mayo brings together this marriage of flavors with its mild, clean, tart-salt balance. Adjust the taste with a sprinkling of salt and pepper, and give your bowl of Grilled Corn and Blue Cheese a nice flourish with some fresh cilantro.

Ingredients

Scale
  • 4 ears corn, husks on
  • 1/2 cup mayonnaise
  • 1/2 cup blue cheese crumbles
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the grill to medium-high heat (about 450 degrees F).
  2. Place the corn on the grill, close the cover, and grill for 10 to 15 minutes, turning every 5 minutes, or until the kernels are tender when pierced with a paring knife.
  3.  Remove the husks and cut the kernels from the cobs into a large bowl.
  4. Add the mayonnaise, blue cheese, salt, and pepper and stir to combine. Serve, garnished with fresh cilantro.
