Classic Cherries Jubilee

Elevate your summer dessert game with a timeless and impressive classic – Cherries Jubilee. This vintage delight is the perfect finishing touch for your summer gatherings, leaving your friends and guests in awe of your culinary skills. With its dramatic flambé presentation and delectable combination of flavors, Cherries Jubilee is a dessert that’s both elegant and delicious.

The preparation of Cherries Jubilee begins with melting butter in a medium pan over medium heat. As the butter melts, you’ll add the sugar and stir it into the butter, creating a caramel-like mixture. Keep a watchful eye as the sugar melts and transforms into a light golden color, which should take about 4 to 5 minutes.

Once your sauce is ready, it’s time to introduce the star of the show – the cherries. Stir in the frozen cherries, allowing them to soften and release their sweet juices. This should take around 5 minutes, and you’ll notice the cherries becoming tender and glistening.

To enhance the flavor, add the zest and juice of one lemon to the cherries, infusing the dessert with a zesty and citrusy kick. Now, it’s time to create a show-stopping moment. Turn off the burner and prepare a long kitchen or fireplace match. Carefully drizzle the Grand Marnier over the cherries, and with a steady hand, ignite the liqueur using the match. Allow it to burn off, creating a dramatic burst of flames that adds not only visual flair but also a hint of warmth to the dish.

With your Cherries Jubilee now flambéed, it’s time to serve. Spoon the luscious, warm cherries over scoops of vanilla ice cream. The contrast between the hot, sweet cherries and the cold, creamy ice cream is simply irresistible.

Ingredients

  • 3 tablespoons unsalted butter
  • 1/4 cup sugar
  • 1 pound frozen cherries
  • Zest and juice of 1 lemon
  • 3 ounces Grand Marnier
  • Vanilla ice cream, for serving

Instructions

  1. In a medium pan, melt the butter over medium heat. Add the sugar and stir to combine with the butter. Cook until the sugar melts, making a light golden color, 4 to 5 minutes.
  2. Add the cherries. Cook, stirring, just until they soften and release their juices, about 5 minutes. Stir in the lemon zest and lemon juice.
  3. Turn off the burner. Light a long kitchen or fireplace match, then drizzle the Grand Marnier over the cherries. Hold the match carefully near the edge of the pan to ignite the liqueur, then allow it to burn off (see Note).
  4. Spoon the flambéed cherries over scoops of ice cream and serve immediately.

Notes

  • This recipe involves igniting alcohol, so be warned and exercise extreme caution!
