Retro Knickerbocker Glory

The Retro Knickerbocker Glory is a classic dessert that brings back memories of simpler times. Served in tall glasses, it’s a delightful treat for anyone who loves ice cream and fruit. This dessert is particularly enjoyable during the summer months when fresh berries are in season.

The star ingredients of this delightful concoction are the fresh summer berries. With one pint each of raspberries, blackberries, and strawberries, you’re in for a vibrant explosion of fruity flavors and textures. These berries not only lend a burst of color but also provide a delightful natural sweetness that complements the other elements perfectly.

To make this sweet indulgence, you’ll also need vanilla ice cream, maraschino cherry juice, whipped topping, additional fruit for garnish, cookie straws, and maraschino cherries.

Begin by layering raspberries, blackberries, and chopped strawberries in parfait glasses. Top each glass with a generous scoop of vanilla ice cream, and drizzle maraschino cherry juice over it for a hint of cherry flavor.

To make it visually appealing, add a dollop of whipped topping and scatter some more fresh fruit on top. Finish it off with a cookie straw and a maraschino cherry for that classic touch.

Ingredients

Scale
  • 1 pint raspberries, rinsed and dried
  • 1 pint blackberries, rinsed and dried
  • 1 cup strawberries, rinsed and chopped
  • 4 cups vanilla ice cream
  • 1/4 cup maraschino cherry juice
  • Whipped topping
  • Additional fruit for topping
  • 4 cookie straws
  • 4 maraschino cherries

Instructions

  1. Evenly distribute the raspberries, blackberries, and strawberries among four parfait glasses. Top with 1 cup of ice cream each. Pour maraschino cherry juice over each.
  2. Top with whipped topping, additional fruit, a cookie straw, and a maraschino cherry. Serve.

Notes

  • Use whatever fruit is in season! Peaches and raspberries work great for a melba knickerbocker while blueberries and strawberries make a patriotic knickerbocker.
