Chicken Cacciatore is a spicy, saucy dish that uses chicken, cherry tomatoes, bell peppers, and onions as the primary ingredients. It’s typically made in a skillet, but if you don’t yet know how to make Chicken Cacciatore in a Crock-Pot, you’re in for a real treat.
What I love most about Chicken Cacciatore, is that it’s perfect for the end of the gardening season right here in New England. If I’m lucky, I pick the last of my cherry tomatoes, peppers, and onions before the first frost and I’ll have more than I know what to do with. That makes them the perfect subjects for a dish like this, where I can use them up quickly before they begin to spoil (also chop and freeze them for later, that works too).
The spice level is up to you, but it wouldn’t be a Cacciatore without it. This simple spicy sauce throws together effortlessly, and it freezes well for lunches and dinners, making it a delicious meal prep dish to double on a Sunday.
To make this recipe easy (because who wants a slow cooker recipe to be difficult?) you can use a jar of tomato sauce from the store, but I love to make our Roasted Tomato Sauce ahead of time to use it for recipes like this!

Crock-Pot Chicken Cacciatore
If you don’t know how to make chicken cacciatore in a Crock-Pot or slow cooker, you’ll be thrilled to know this dish is only one-step long and is a great way to use up your end of season cherry tomatoes, onions, and bell peppers.
- Prep Time: 15 minutes
- Cook Time: 8 hours
- Total Time: 8 hours 15 minutes
- Yield: Serves 4 to 6 1x

Ingredients
- 6 boneless chicken thighs or breasts
- 3 small onions (2-3″ diameter) sliced into strips (I like to make them big so picky eaters can remove them)
- Two handfuls of cherry tomatoes whole
- 3 bell peppers, cored and sliced into strips
- 16 oz jar of tomato sauce ( I suggest our Roasted Tomato Sauce!)
- 3 basil leaves
- 1 tsp red pepper flakes
- Salt & Pepper to taste
- Optional: Prepared pasta or rice
Instructions
- Toss everything in a slow cooker and cook for 8 hours on low.
- Use a fork to tear the chicken, and serve alone, or over-prepared pasta or rice.
