Walnut-Rosemary Crusted Salmon

Tasty, yes, but salmon is also one of the most nutritious types of fish. Known as a great source of omega-3 fatty acids and protein, salmon has been the stuff of innumerable recipes, especially for those who are health-conscious. Whether served raw, baked, seared, or fried, salmon is an aromatic, melt-in-your-mouth experience due to how rich in oils it is, and this Walnut-Rosemary Crusted Salmon recipe is no exception!

Because of its distinct taste and soft texture, salmon can be easily paired with practically anything you can find in your kitchen. If you’re hankering for a swift and savory salmon dish, our Walnut-Rosemary Crusted Salmon will have you digging into a host of flavors and textures that can make even the most mundane mealtimes extra special. If you’re new to salmon and want a more mild-flavored fish, look for white meat salmon, because the lighter or whiter the color, the milder it will taste.

Much like salmon, walnuts are also rich in omega-3 fatty acids, making these two ingredients the perfect companions for each other. At the same time, the crunchy texture of walnuts combined with panko breadcrumbs serves as a delightful contrast against the salmon’s distinct smoothness.

Rosemary, of course, brings out all the zest of the lemon, crushed red pepper, and Dijon mustard while simultaneously tempering the sweetness of honey. Aside from emitting an exquisite fragrance, rosemary is also a feast for the eyes as it gives that extra punch of color to the orange and brown undertones from the salmon and walnuts. Rosemary can also nicely complement garnishes like parsley and lemon wedges.

All that said, though it may sound a little fancy, this Walnut-Rosemary Crusted Salmon recipe is fairly easy to make. In fact, it won’t even take half an hour for you to prepare this dish. This can come in handy when you’ve got family and friends dropping by for a surprise visit!

Ingredients

Scale
  • 2 teaspoons Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1 teaspoon chopped fresh rosemary
  • 1/2 teaspoon honey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper
  • 3 tablespoons panko breadcrumbs
  • 3 tablespoons finely chopped walnuts
  • 1 teaspoon extra-virgin olive oil
  • 1 (1-pound) skinless salmon fillet, fresh or frozen
  • Olive oil cooking spray
  • Chopped fresh parsley and lemon wedges for garnish

Instructions

  1. Preheat oven to 425 degrees F. Line a large, rimmed baking sheet with parchment paper.
  2. Combine mustard, garlic, lemon zest, lemon juice, rosemary, honey, salt, and crushed red pepper in a small bowl.
  3. Combine panko, walnuts, and oil in another small bowl.
  4. Place salmon on the prepared baking sheet. Spread the mustard mixture over the fish and sprinkle with the panko mixture, pressing to adhere. Lightly coat with cooking spray.
  5. Bake about 8 to 10 minutes, until the fish flakes easily with a fork, depending on thickness.
  6. Sprinkle with parsley and serve with lemon wedges as garnish, if desired.

    This was delicious! As I don’t use cooking spray (to spray on top of the crumb mixture) I just increased the amount of oil stirred into the crumb mixture by 1/2 tsp. I am not a fish-lover, but I will definitely be making this again.
