Vanilla cherry ice cream

The lazy, hazy, crazy days of summer call for cool, refreshing treats. And what summer dessert says “summer” more than ice cream? Of course, if you’re in New England, it’s always ice cream season, but ice cream still reigns supreme as a summer treat wherever you are.

If you really love ice cream, it’s worth investing in an ice cream maker—even one of the old-fashioned hand-cranked models. Using a hand-cranked ice cream maker can make for a great family activity; it can be a lot of work to keep cranking away until your ice cream is done, so the more, the merrier. The more convenient way to make ice cream is to get an electric ice cream maker; besides being more convenient, the electric models usually have a higher capacity than the old-fashioned hand-cranked versions.

Our Vanilla Cherry Ice Cream recipe takes traditional vanilla ice cream from delicious to divine. Vanilla ice cream, when made properly, is as delicious as any fancy flavor in the ice cream freezer. But our recipe, with the combination of vanilla extract and almond extract, gives the ice cream a welcome additional flavor layer. If you’re feeling really ambitious and you have vanilla pods on hand, you could experiment with using real vanilla. Want to save that adventure for your next batch of ice cream? Consider making vanilla extract with real vanilla pods. Soak them in vodka for a few weeks until they share their flavor.

Of course, the real stars of the show here are the cherries: juicy, flavorful, luscious, and colorful! What a great way to use some of your cherry harvest! Your guests will thank you — and probably ask for seconds!

Ingredients

Scale
  • 2 cups heavy cream
  • 1 14-ounce can condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups fresh cherries, pits removed and cut in quarters

Instructions

  1. Combine the heavy cream, condensed milk, vanilla, and almond extract in a bowl and whisk until well mixed.
  2. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. Add cherries during the last few minutes. Transfer to a freezer-safe container and freeze for at least 2 hours before serving.
