Ingredients

Scale
  • 1 pound rigatoni
  • 1 (15-ounce) container ricotta cheese
  • 2 cups pumpkin puree
  • 3 large eggs
  • 1/2 cup Greek yogurt
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground nutmeg
  • 1 cup grated Parmesan cheese
  • 1 cup pecans, chopped
  • 4 sage leaves

Instructions

  1. Preheat the oven to 375 degrees F and lightly coat a 9 x 13-inch baking dish with cooking spray.
  2. Bring a large pot of water to a boil, add the rigatoni, and cook until al dente. Drain and return the rigatoni to the pot.
