- 1/2 cup vegetable shortening
- 2 large eggs
- 2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 1/2 cups applesauce
- 1 apple, peeled, cored, and diced
- 1/2 cup pecans
- 1 teaspoon vanilla bean paste or vanilla extract
- Caramel sauce for drizzling
Instructions
- Preheat the oven to 350 degrees F. Grease a 9 x 13-inch baking dish.
- Using a hand mixer or a stand mixer fitted with the paddle attachment, beat the sugar and shortening on low speed until fluffy. Add the eggs, one at a time, beating until incorporated. Add the flour, cinnamon, cardamom, baking soda, and salt. Beat until well combined. Fold in the applesauce, apple, pecans, and vanilla.
- Pour the batter into the baking dish and bake for 30 to 35 minutes or until the cake is golden and a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan, then slice and serve with a drizzle of caramel sauce.
