Sweet Mango-Tomato Salsa

Sweet Mango-Tomato Salsa

I stumbled upon this Sweet Mango-Tomato Salsa recipe while preparing for a school potluck. Skeptical at first (mango in salsa?), I decided to give it a shot, and oh boy, am I glad I did!

From the first bite, it’s a textural adventure. The mangoes, perfectly ripe, offer a velvety smoothness that contrasts beautifully with the juicy pop of diced tomatoes. Finely minced red onions provide a subtle crunch, while fresh cilantro adds little bursts of herbal freshness throughout.

But it’s the flavor profile that really shines. The natural sweetness of the mangoes takes center stage, but it’s far from overwhelming. It’s beautifully balanced by the slight acidity of the tomatoes and the bright, zesty kick of fresh lime juice. The red onions contribute a sharp, pungent note that cuts through the sweetness, while the cilantro brings a citrusy, slightly peppery flavor that ties everything together.

What surprised me most was how the flavors developed over time. After chilling for an hour, the ingredients had mingled and mellowed, creating a more cohesive taste. The lime juice had slightly “cooked” the onions, taming their raw bite and infusing the entire salsa with a tangy undertone.

The versatility of this salsa is impressive. It’s fantastic with chips, of course, but it also pairs beautifully with grilled fish or chicken. I’ve even used it as a topping for tacos, where its sweetness offers a delightful contrast to spicy fillings.

One word of warning: this salsa is addictive. I ended up making a second batch for the potluck because I couldn’t stop snacking on the first one! The combination of textures and flavors – smooth, juicy, crunchy, sweet, tangy, and zesty – creates a salsa that’s far more than the sum of its parts. It’s a refreshing twist on traditional salsa that’s perfect for summer gatherings or anytime you want to add a burst of tropical flavor to your meal.

Ingredients

Scale
  • 2 mangoes, peeled and cut into 1/2-inch pieces
  • 2 plum tomatoes, cut into 1/2-inch pieces
  • 1/2 red onion, finely minced
  • 1/4 cup minced fresh cilantro
  • 1/3 cup lime juice
  • Salt and freshly ground black pepper

Instructions

  • Combine all of the ingredients in a large bowl and stir to coat evenly with lime juice. Season with salt and pepper to taste. Refrigerate for at least 1 hour before serving.
