Orange You Glad It’s Spring Dessert

This marbled dessert is pretty to look at and delicious to eat! Made with orange soda, mandarin oranges, gelatin, and cream, this is a refreshing and tasty end to a meal.

Ingredients

Scale
  • Orange Layer
    • 3 envelopes gelatin
    • 1/2 cup cold water
    • 1/2 cup boiling water
    • 1/4 cup sugar
    • 2 1/2 cups orange soda
    • 4–5 ounces mandarin oranges, cut into chunks
  • Cream Layer
    • 3 envelopes gelatin
    • 1/2 cup cold water
    • 1/2 cup boiling water
    • 2 cups vanilla ice cream, completely melted

Instructions

  • Orange Layer
    1. Sprinkle the gelatin over the cold water in a large bowl. Stir to dissolve and let sit for 1 minute.
    2. Pour the boiling water with the sugar over the gelatin and stir for 2 minutes to ensure that the sugar has completely dissolved.
    3. Pour in the orange soda and stir to combine. Pour the mixture into a 9 × 13-inch pan sprayed with cooking spray. Refrigerate for at least 4 hours, or until the gelatin is firmly set.
    4. Remove the gelatin from the fridge and cut into 1/4 × 1/2-inch rectangles. Spray an 8-inch square pan with cooking spray.
    5. Place the gelatin pieces into the pan, spreading them out. Add the mandarin chunks around the gelatin pieces.
  • Cream Layer
    1. In a large bowl, sprinkle the gelatin over the cold water. Stir and let sit for 1 minute.
    2. Pour the boiling water over the gelatin and stir for 2 minutes until completely dissolved. Add the melted ice cream and stir to combine.
    3. Pour the ice cream mixture over the gelatin and mandarin oranges.
    4. Cover and refrigerate for 4 hours or overnight.
    5. Cut into sixteen 2-inch squares and serve.
