Nutrient-Rich Kale Smoothie

This kale smoothie is solid green gold.

Nutrient-Rich Kale Smoothie

I love greens. Whether it’s spinach (thanks, Popeye) or collard greens or dandelion greens, some greens on the plate make every meal better as far as I’m concerned. I couldn’t help but smile a little when kale became the subject of pop culture, with all the “Eat More Kale” shirts and stickers. Then I started to notice kale in little front porch gardens. It was on the menu at more restaurants and on the shelves at more shops. You could find kale chips at convenience stores, fresh kale salad at the supermarket, steamed kale at a restaurant, or plain old kale cooked with garlic and onions as a side at pretty much any dinner party.

In fact, I most often cook kale at home with plenty of onions and garlic and a bit of salt and pepper. That sweet, buttery  and nutty flavor is a staple in my kitchen.

Naturally, I had to give this kale smoothie a try. And since I first tried it in late summer, I opted for fresh fruits as much as I could, though frozen certainly works. It’s a little hard to get fresh blueberries in the northeast in the middle of winter.

I will add that the recipe as-is may be perfect if you’re working to get more greens into your diet, but don’t necessarily like kale. Admittedly, the green is not well-known for its flavor in smoothies. I went a little heavier on the kale, though, since I love the flavor. I’ve also made this with almond milk instead of the water, which adds yet another flavor profile to the drink. That’s the nice thing about smoothies, though. You can adapt them quite easily to suit your preferences.

Give this a try, though. It’s a nice blend of tropical and earthy. And it’s tasty!

Nutrient-Rich Kale Smoothie

This kale smoothie is solid gold. Or should we say solid green gold. In any case, it’s healthy, nutritious, and delicious.

Ingredients

Scale
  • 2 cups fresh or frozen kale
  • 1/2 large banana, sliced and frozen
  • 1/2 cup frozen blueberries or mixed berries
  • 1/2 cup frozen pineapple chunks
  • 1 cup filtered water
  • 2/3 cup 100 percent pomegranate juice
  • Juice of 1/2 lime

Instructions

  1. Place the kale, banana, blueberries, pineapple chunks, filtered water, pomegranate juice, and lime juice in a blender.
  2. Blend until smooth. Pour into glasses and serve.
