I’ve never been to New Zealand, unless you consider watching The Lord of the Rings movies on the big screen the same as being there. One thing I noticed about the movies, however, is that there was no kiwi. Lembas bread, honey cake, ent-draught, and even apples appear, but kiwi? Even in a land known for the fruit? Nope. The hobbits were definitely missing out.
Kiwi is wonderfully tangy and juicy. It’s a true “feel good” fruit, rich in vitamin C, antioxidants, fiber and potassium. Plus, to be perfectly honest, that bright green fruit is pretty eye-catching on a plate. Chef Addy calls this the “cheeriest” fruit. “If I’m ever feeling a little down and need to regain that pep in my step, I think of the cheeriest, most concentrated form of energy. I gather all of my favorite fruits in one place, blend them up, and enjoy!”
As a result, we have this four-berry kiwi smoothie. She’s not kidding, either. The ingredients include strawberries, raspberries, blueberries, and blackberries, along with kiwi, fresh-squeezed orange juice, honey and lime juice. That is one nutritional powerhouse of a drink!
I’ll admit, I have a tendency to alter recipes a lot, often thinking of them more as inspiration or suggestions. This is one of those rare ones that I actually follow pretty closely. Everyone I’ve made it for has enjoyed it quite a bit, as well.
Make this smoothie at breakfast for a fun and healthy start to your day. Or better yet, enjoy it as a mid-afternoon snack when your eyes are drooping, your head is bobbing, and you’re about five seconds away from kicking off your shoes, grabbing a blanket, and taking that afternoon nap.
