Greek Yogurt Breakfast Bark

Forget the muffin and try this Greek yogurt breakfast bark. It's tasty, easy to make, and a perfect way to start the day.

Greek Yogurt Breakfast Bark

I don’t know if I’m supposed to say this, but prior to this recipe, I’d never had breakfast bark. I’ve always thought of bark as a holiday dessert. Specifically, in my mind the options were pretty much either chocolate bark made with a variety of nuts and dried fruit or peppermint bark made with dark and white chocolate and peppermint candies. So definitely not a breakfast item.

Similarly, I kept Greek yogurt for breakfast or an afternoon snack, usually with some fresh fruit. Or I might use it to make tsaziki, although it’s also good in cole slaw.

Greek yogurt breakfast bark though? Yeah, that was new to me. But why not give it a try? The kids are always up for a good snack or something besides toast and oatmeal on a school day, and it’s easy enough.

The results? Well, it’s got pistachios, so that’s already a plus. You can’t go wrong with fresh blueberries and strawberries, so we’re good there, too. The honey and maple syrup add some nice sweetness, although I went with one tablespoon of maple syrup instead of two, but that’s just a matter of personal taste. I did add coconut, though, because why not?

That’s one of the nice things about recipes like this – they’re easy enough to adapt as long as you don’t go too far off track. For example, the honey helps everything stick together, so you probably don’t want to omit that.

Certainly, for as easy as this recipe is to make, and given that the ingredients are usually either on my shopping list, in my cupboard, or sometimes growing in my garden (strawberries FTW!), it’s a great alternative to the typical weekday breakfast and it’s way tastier than a boring granola bar by itself.

Greek Yogurt Breakfast Bark

When I’m running late to work in the morning, I often just grab the nearest muffin or waffle and head out the door. Breakfast bark allows me to keep nibbling away at something as I try to find my purse and shoes, while still feeling good knowing that it’s full of good-for-you ingredients like fruit and nuts!

  • Yield: Serves 6-8 1x

Ingredients

Scale
  • 1 1/2 cups Greek yogurt
  • 2 tablespoons maple syrup
  • 1 tablespoon honey
  • 1/2 cup mixed berry granola, such as Quaker Real Medleys Granola
  • 1/2 cup blueberries
  • 6 strawberries, 3 sliced and 3 chopped
  • 1/4 cup pistachios

Instructions

  1. Line a 9 × 13-inch baking pan (or 8 × 8-inch baking pan if you want a thicker bark) with parchment paper, leaving an overhang on two sides.
  2. In a small bowl, combine the yogurt, maple syrup, and honey.
  3. Pour the mixture into the baking pan and spread it to about 1/4 inch to 1/2 inch thick.
  4. Sprinkle the granola, blueberries, strawberries (sliced and chopped), and pistachios over the yogurt
  5. Cover the baking pan with foil and place in the freezer for at least 2 hours.
  6. Break or cut into pieces. Put on a platter and serve.

Notes

  • Variations: Use different granola flavor combinations, fruits, and nuts. You can also add coconut and dark chocolate chips.
