Ingredients

Scale
  • 4 large bell peppers, halved and seeded
  • 1 cup chopped portobello mushrooms
  • 2 cups fresh spinach
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Sauté mushrooms and garlic in olive oil until tender.
  2. Add spinach and cook until wilted.
  3. Combine with quinoa and feta, seasoning with salt and pepper.
  4. Stuff the mixture into bell peppers and bake at 375°F for 20 minutes.
